And Hallelujah, it’s no sugar added!

Plump and gorgeous cherries luxuriating in a silky-smooth, not-too-sweet mousse.

YES…this is whipped cream, BUT…a little goes a very long way – so no worries about budgeting it into your eating plan for the day.  







2 ounces unsweetened solid chocolate, chopped
1 cup + 2 tablespoons heavy whipping cream, divided
2 tablespoons cherry liqueur or sugar free cherry syrup, optional (if not using, add 2 more tablespoons cream)
1/2 cup Splenda
1/2 teaspoon almond extract
1 teaspoon vanilla extract
2/3 cup diced fresh cherries
6 whole cherries with stems for garnish

In a medium bowl heat the chopped chocolate, the 2 tablespoons heavy cream (4 tablespoons total, if not using liqueur or syrup) and the liqueur or syrup in the microwave at 30 second intervals, whisking in between, until melted and very until smooth. Set aside to cool slightly.

In a large bowl combine the remaining cream, Splenda, almond, and vanilla extract and beat with an electric mixture until peaks that hold their shape.

Beat 1/2 cup of the WHIPPED cream into the chocolate mixture until well blended. Carefully fold the chocolate mixture into the remaining whipped cream until no white streaks remain. Gently fold in diced cherries.

Divide into 6 dessert glasses and chill for at least one hour. Garnish with a whole, fresh cherry. Makes six servings.

    I went to Whole Foods today and they had fresh cherries for sampling… I have never eaten a fresh cherry, and wow it was sooo good!! (I’ve just had cherries out of a jar.. shows how simple I am!) But it made me think of this dessert… I saw it on your blog earlier this morning. This would be wonderful with those fresh cherries!

      Hey, Kel!!

      You can leave it out – or find some sf white chocolate (actually even regular white chocolate would be okay, probably…only 2 ounces for the whole batch. Not that much sugar).

      If you do leave it, maybe add a couple tablespoons vanilla or cheesecake pudding powder to help stabilize it and then it won’t deflate and will have that mousse texture.
